Ingredients

1 tsp cumin seeds

1 tsp coriander seeds

1 tsp fennel seeds

A pinch of dried chilli flakes (optional)

A pinch of flaky sea salt

100g hazelnuts (skin on or off)

2 tbsp olive or rapeseed oil

100g mixed seeds of your choice, such as sunflower, sesame and pumpkin

200g quinoa

Juice of ½ lemon, or more to taste

Sea salt and black pepper

2 sweet potatoes

1 medium brocolli
