165g edamame, podded
½ lemon
30g cottage cheese
2 slices of bread
1½ tsp olive oil
chives
15g fetta cheese
chilli flakes
Step 1
Place the edamame beans in a saucepan
over a medium heat and squeeze in the lemon juice. Heat the beans
for 5 minutes and use a fork to crush around half of them.
Step 2
Spread the cottage cheese on the
toast and top with the edamame beans. Drizzle over the oil then
sprinkle over the chives, feta and chilli flakes to serve.
