180g dried raisins
125g dried prunes
180g dried sultanas
180g dried currants
125g mixed glacé fruits
60g chopped mixed peel
1/2 cup orange or lemon juice
60g crushed nut toffee brittle
60g glacé cherries - quartered
60g grated dark chocolate
90g blanched almonds, chopped and toasted
142ml cream (or more)
2 litre vanilla ice-cream
This is a very rich mix and a small serve only is usually needed.
I often just put it into an empty 4 litre ice-cream container.
This is a very hard ice-cream to scoop.
Peanut brittle is usually available from Darrel Lee.
Chop raisins, prunes and glace fruits and mix with the sultanas, currants and mixed peel.
Sprinkle with juice and allow to stand for several hours.
Lightly and quickly fold all the ingredients into the slightly softened ice cream.
Pack the mixture into a 3 litre mould and freeze overnight.
