+ 180g dried raisins +

+ 125g dried prunes +

+

+ 180g dried sultanas +

+

+ 180g dried currants +

+

+ 125g mixed glacé fruits +

+

+ 60g chopped mixed peel +

+

+ 1/2 cup orange or lemon juice +

+

+ 60g crushed nut toffee brittle +

+

+ 60g glacé cherries - quartered +

+

+ 60g grated dark chocolate +

+

+ 90g blanched almonds, chopped and toasted +

+

+ 142ml cream (or more) +

+

+ 2 litre vanilla ice-cream +

+ This is a very rich mix and a small serve only is usually needed. +

+

+ I often just put it into an empty 4 litre ice-cream container. +

+

This is a very hard ice-cream to scoop.

+

Peanut brittle is usually available from Darrel Lee.

Directions

+ Chop raisins, prunes and glace fruits and mix with the sultanas, + currants and mixed peel. +

+ Sprinkle with juice and allow to stand for several hours. +

+

+ Lightly and quickly fold all the ingredients into the slightly + softened ice cream. +

+ Pack the mixture into a 3 litre mould and freeze overnight. +
